Equipment: Microwave

Ingredients:

  • 1/2 c cooked brown rice (leftover rice works great)
  • 1/2 c milk
  • 1 tbsp maple syrup (or honey)
  • 1 tbps peanut butter (no sugar added)
  • Pinch of cornstarch
  • 1/4 c vanilla yogurt
  • Slivered almonds or other nuts (optional)

Directions:

In a microwave safe bowl, add rice, milk, syrup, and peanut butter. Mix to combine (the peanut butter will be lumpy at this point).

Microwave on high for about 1 1/2 minutes, until warm. Remove and mix well to combine the peanut butter. Add a pinch of cornstarch and mix well if it needs to be thickened.

Top with the vanilla yogurt, drizzle with a little extra syrup or honey, and sprinkle with nuts. Enjoy!
