Chickpea Sandwich

Equiptment needed: Mixing bowl

Ingredients:

  • 1 can low-sodium chickpeas / garbanzo beans (rinsed & drained)
  • 2 stocks of celery, finely chopped
  • 1/4 c diced onion
  • 1 tsp soy sauce
  • 1 tbsp garlic powder
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 2 tbsp sweet pickle relish
  • Mustard, to taste
  • Whole wheat bread or whole wheat wrap
  • Sliced tomatoes
  • Lettuce leaves


Directions:

Drain and rinse the chickpeas, then dump them into a mixing bowl and mash with a fork, leaving some whole. Stir in the rest of the ingredients (except the bottom three). Chill overnight and let the flavors meld together. Serve on whole wheat bread or a wrap with lettuce and tomatoes.

Makes approximately 3-4 servings.
