Ingredients
Salad:
- 5 oz baby spinch or kale
- Small can no sugar added Mandarin oranges, drained
- 1 c cooked quinoa or brown rice (optional)
- 1/2 c dried cranberries
- 1/4 c slivered almonds or walnut pieces
- 1/4 c red onion
- 1/4 c Feta cheese crumbles
- 2 grilled chicken breasts, sliced in strips
Dressing:
- 2 tbsp freshly squeezed orange juice
- 1 tbsp freshly squeezed lemon juice
- 1 tsp extra virgin olive oil
- 2 tsp honey
- Pinch of black pepper
- Pinch of garlic powder
Directions
1. Combine all salad ingredients in a large salad bowl, adding chicken and Feta cheese last.
2. To prepare the dressing, combine all dressing ingredients in a bowl and whisk well.
3. Drizzle dressing over the salad and enjoy!
