
Equipment: Crockpot or microwave
Ingredients
- Onion, diced
- Garlic, minced
- Red bell pepper, diced
- 1/2 c black beans
- 1 tsp spices (cumin, cayenne, salt, pepper)
- 1 c cooked shrimp, cut into pieces
- Avocado, sliced
- Tomato, diced
- Fresh spinich
- Olive oil
- 2 tbsp queso fresco, or shredded monterey jack cheese
- Hot sauce
Directions
In a crockpot over high heat, cook the onions, pepper, and garlic until tender. Add the black beans and spices, and heat until warm. If using a microwave, heat everything in a splash of water until cooked through.
To assemble plate: Add spinich, avocado, and tomatoes. Drizzle with olive oil, then top with shrimp, veggies and beans from the crockpot, and sprinkle with cheese and hot sauce.
