
Equipment needed: Mixing bowl, small container for dressing
Ingredients:
- 2 c cooked brown rice
- 3/4 c frozen peas
- 1 apple, diced
- 1/4 c raisins
- 1/3 c walnuts, chopped
- 2 stalks green onion, chopped
- 1-2 tbsp fresh chopped parsley (optional)
For the dressing:
- 1 clove garlic, minced
- 2 tbsp honey
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
Directions:
In a small container, combine the dressing ingredients and shake well to combine. In a bowl combine all the salad ingredients and mix well. Add the dressing and stir until everything is well coated. If you have time, allow the salad to rest in the refrigerator for 6-8 hours overnight to let the flavors come together.
