Equipment:
 Microwave

Ingredients:

  • Eggs or egg whites

  • Canadian bacon slices

  • American cheese slices

  • Whole wheat English muffins

  • Salt & pepper to taste

Use microwave to cook the eggs, and season with salt and pepper. On an English muffin, place the eggs, a slice of Canadian bacon, and a slice of cheese. Wrap each sandwich in a paper towel and store in a sealed baggie or container in the refridgerator for up to 24 hours.

When ready to eat, remove one sandwich and microwave with the paper towel still wrapped around it for 1.5 to 2 minutes. If you're going to wait an hour or so before eating, wrap in aluminum foil to keep warm.
