Equipment

  • Large salad bowl

Ingredients

Salad:

  • 5 oz baby spinch or kale
  • Small can no sugar added Mandarin oranges, drained
  • 1 c cooked quinoa or brown rice (optional)
  • 1/2 c dried cranberries
  • 1/4 c slivered almonds or walnut pieces
  • 1/4 c red onion
  • 1/4 c Feta cheese crumbles
  • 2 grilled chicken breasts, sliced in strips

Dressing:

  • 2 tbsp freshly squeezed orange juice
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp extra virgin olive oil
  • 2 tsp honey
  • Pinch of black pepper
  • Pinch of garlic powder

Directions

1. Combine all salad ingredients in a large salad bowl, adding chicken and Feta cheese last.

2. To prepare the dressing, combine all dressing ingredients in a bowl and whisk well.

3. Drizzle dressing over the salad and enjoy!
