Equipment:

  • Mixing bowl

Ingredients:

  • 3 oz canned tuna in water, drained
  • 1/4 c non-fat greek yogurt (or 1 tbsp mayonnaise)
  • 1/2 of a celery stalk, chopped
  • 1 squeeze of lemon juice
  • 3 slices roasted red peppers
  • 1 handful of baby spinich
  • salt and pepper to taste
  • 1 whole wheat tortilla

Directions:

1. In a mixing bowl, combine tuna, yogurt, celery, lemon juice, salt, and pepper, and mix well.

2. Fill tortilla with red peppers, spinich, and tuna mixture and enjoy!
