Equipment:
 Mixing bowl

Ingredients:

  • 1/4 c mayonnaise
  • Salt & pepper
  • 1 tbsp fresh lemon juice
  • 1 1/2 lbs cooked shrimp, cut in half crosswise
  • 2 stalks celery, chopped
  • 1/4 c minced red onion
  • 1 small head butter lettuce, torn into pieces
  • Whole wheat hot dog buns
  • Fresh fruit or sliced cucumbers as a side


Directions: 

In a mixing bowl, add the mayonnaise, lemon juice, 1/4 tsp salt, and 1/4 tsp pepper. Fold in the shrimp, celery, and onions.

Line a hot dog bun with lettuce and fill with shrimp mixture. Serve with a side of fresh fruit or sliced cucumber.
