Equipment

  • Rice Cooker

Ingredients

  • 2 c cooked brown rice
  • 1/2 c onions, diced
  • 2 cloves garlic, minced
  • 1/2 c carrots, diced
  • 1/2 c frozen green peas, thawed
  • 3 tbsp soy sauce
  • 2 eggs
  • 12 oz boneless, skinless chicken breasts, cut
  • into pieces
  • Ginger (fresh or powder), to taste

Directions

  1. Add the onions, garlic, and carrots to the rice cooker and sauté for about 4-5 minutes until tender.
  2. Add the chicken and cook until golden brown. Add brown rice and mix well until heated through.
  3. In a small container, shake up the eggs to scramble. Add mixture into the rice, and quickly stir to scramble the egg throughout.
  4. Add peas, soy sauce, and ginger. Heat until warm and enjoy!
