Ingredients

  • Sweet potato
  • Eggs or Egg Beaters
  • Can of low sodium black beans
  • Corn or flour tortillas
  • Canned diced tomatoes with peppers
  • 1 Avocado

Directions

Cook sweet potato until soft and then mash.

Peel and slice the avocado.

Beat eggs or egg beaters in a bowl and microwave until cooked through.

Microwave the black beans and the tortillas.

Serve the filling in the tortillas, and top with the diced tomatoes.

Additional Options

Add pre-cooked turkey sausage crumbles and diced onions to the eggs.

You could use chicken instead of eggs to make a lunch of dinner taco.

Add shredded romaine lettuce for a little extra nutrition and crunch.
